This recipe is a variation on a theme that the Old Boy showed me how to make many moons ago. It's a simple, quick and vaguely healthy (apples!) recipe that has only a few ingredients and minimal preparation time. As a result, there will be no metal or cheap Dutch beer to aid the experience.
Here's what you'll need.
Fashion a plug for the base of your apple by cutting about 1 cm from the bottom of this apple-cylinder. Dispose the remainder of the cores - they are no longer of use to anyone.
Spoon in raspberry jam (you'll need about 2 - 3 teaspoons in each apple, depending upon their size) into the newly created void and wrap completely in aluminium foil.
Then put the apples into a roasting pan and let them sit in a hot (250 degrees) oven for 20 minutes.
Unwrap and serve with custard, and enjoy with another slug of the grappa & espresso
